Method

  • Bring a large pot of water to a boil and season it with salt until it is as salty as the sea.
  • Heat a small amount of extra virgin olive oil in a sauté pan over high heat. When the oil is simmering, add the garlic . Allow the garlic to become fragrant. Remove the toasted garlic from the pan and set it aside to toss with the pasta. Add little water for cool down the oil and add parsley.
  • Place the pasta in the boiling water and allow it to cook until it is al dente, then add it to the pan. Toss and add a ladleful of pasta water and a healthy drizzle of extra virgin olive oil. Cook the pasta for an additional minute, then add the breadcrumbs and the toasted garlic. Serve hot.
