Method
Heat corn oil in a pan
Add the onion and sweat
Add the assorted mushrooms and sauté and then add the rice
Keep adding stock enough to cover the rice and stir continuously usually for 16-18 minutes
Once the rice has cooked, add the butter and parmesan and adjust consistency with stock
Check for seasoning and garnish!
